The roaster stays awake to roast the leaves packed in bamboo baskets, in small batches, over the fruitwood coal. This slow, traditional roasting process takes place for 1 to 2 weeks, when the skilled roaster eventually produces an oolong that is warm and dark with a sweet chocolate scent.
